Don’t Hate Me – Bake Me!: Banana Bread for Smushy Bananas

Does anyone else hate smushy bananas as much as I do?  I can’t even stand spots. I want my bananas to be slightly green on the ends. It’s actually a texture and taste thing with me. That being the case I wind up with lots of bananas that aren’t fit for human consumption by my standards. Even though they’re cheap I also can’t stand to throw anything away that can still be used. The solution: Banana Bread!


Though I have occasionally made this recipe with one large banana it’s best with two. Don’t have two? Freeze one overripe banana, peeled, in a zip top bag and thaw when it has a mate.  Or pop the next one in with it and freeze both till you feel like baking.

Sad Banana



  • 1 stick of softened butter
  • 1 cup of brown sugar
  • 2 eggs, room temperature
  • 2 bananas, mashed or whole if using a stand mixer
  • 2 cups of all purpose flour
  • 1 teaspoon baking soda
  • ½ cup roughly chopped walnuts
  • 1 Tablespoon spiced dark rum (or 1 tsp vanilla, but you take a boringness penalty!)
  • A sprinkle of brown sugar for the top, use your own discretion.


First, cream the butter and sugar in your stand mixer with the paddle attachment.


Add eggs one at a time.  Break in a separate bowl to make sure you don’t get shell. Did you forget to take the eggs out of the fridge? Warm them in a bowl by running hot water from the tap, let it run over the eggs till they feel slightly warm, the insides will be colder.


Add rum and bananas. Mix until bananas are mushed in well.


Add your flour and baking soda, mix well.


Lastly, add your walnuts.  You toasted them in the oven first, right?  350 for 10 minutes or until they smell nutty (nuttier?).


Pour your batter in a bread/loaf  pan or muffin tin if you don’t have a loaf pan. This works best as a loaf though.


Sprinkle your discretionary brown sugar over the top and pop in a 350 degree oven for 55-60 minutes.  Top will be brown and the sugar will look sandy.

Now, get a glass of milk and possibly a perfectly good slightly green banana and have yourself a snack!
