Limoncello Cupcakes

Today’s PP (pre-paleo) recipe is brought to you by the letter B. And B is for Booze. Boozy cupcakes, yum! What about these doesn’t sound like a good idea?? Not only are they moist and bursting with flavor, they make your kitchen smell good too! By the by, limoncello is lemon liqueur. Just in case you we’re aware. I’m going to work on a Pama cupcake (pomegranate liqueur).

Without further ado I give you Limoncello Cupcakes (limoncello in the cupcakes and the icing!)

Ingredients

For the cupcakes:

  • 1 3/4 cups cake flour
  • 1 teaspoon aluminum free baking powder
  • ½ teaspoon fine sea salt
  • 4 tablespoons softened butter
  • 1/3 package softened cream cheese
  • 1 cup sugar
  • 3 eggs
  • 4 tablespoons limoncello
  • ½ cup milk
  • ¼ cup lemon juice
  • Zest of one lemon (save about ½ teaspoon for the frosting)

 

Lemon Drunk Cream Cheese Frosting:

  • 4 tablespoons softened butter
  • The rest of the package (2/3 package) cream cheese
  • 1 tablespoon limoncello
  • 2 cups powdered sugar
  • ½ teaspoon lemon zest

 

Cupcakes:

Preheat oven to 350 degrees.

Cream your butter and sugar in the mixer on medium for 2-3 minutes but this time add the cream cheese too.  That’s right, cream the cream cheese!  Add eggs one at a time, don’t add the next until no bright yellow streaks remain, ie. completely mix it in!

Add salt, baking powder, zest, and limoncello. Mix.

Mix milk and lemon juice. Now alternate adding flour and lemon/milk, beginning and ending with wet.

Place liners in 12 cupcake tins. Spoon batter into tins ¾ full. Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean.  Let cool before icing!

Frosting:

Toss everything into a bowl and combine with a hand mixer until smooth.  Now ice your completely cooled cupcakes. Top with a bit of candied lemon peel or fresh lemon zest and dig in!

    Limoncello is no joke. It seems tame but really packs a punch. In Italy they use grain alcohol to make it.

    LOVE limoncello! Alcoholic cupcakes are awesome. I made a batch of strawberry cupcakes with a limoncello lemon curd filling and something similar to your drunk frosting..that was a great idea. Pama cupcakes sound like a great idea too 🙂
