Cheesy Taco Pile Up – Gluten Free

So those fast food commercials have you wondering about your favorite cheesy corn chip as a taco shell don’t they?  Yeah, me too. I broke down and had one. They are pretty tasty.  But I thought, wow, why can’t I do this at home and make it a nutritious meal?  So I did.

The bed of chips gives a nice crunch. You work in extra protein and fiber with the black beans and get your omega 3s with the avocado, lutein in the tomato and salsa. Nice!  Plus, this only takes around 15 minutes for 4 servings. Less time than it takes to get to the fast food place and back!


  • 1lb of ground turkey
  • 1 Yellow onion, diced
  • 1 Tablespoon taco seasoning
  • 1 teaspoon salt
  • 1 cup salsa
  • 1 avocado, cubed
  • 1 can black beans, rinsed
  • 1 cup shredded Colby jack cheese
  • 1 large tomato, diced
  • 1 cup lettuce, shredded
  • 4 tablespoons sour cream
  • 2 cups crushed Doritos® Chips (per Frito Lay® these are gluten free!)

Brown turkey and break into small pieces, season with taco seasoning and salt. Remove cooked meat and sauté onion in the scant turkey drippings.  Combine meat, onion, salsa, beans and avocado.

Avengers Taco Pile Assemble! Place a bed of smooshed chips on a plate.  Top with meat mix, then cheese, then lettuce, tomato and sour cream. Viola! Doritos® taco pile up!  Soooo good without all the calories of fast food catastrophes. You’ll note in the photos I don’t include avocado or lettuce, well, that’s because mine were past their prime so I didn’t get to use them.  Sadface!
