“Strawberry Cheesecake” Chocolate Dipped Strawberries!

I love chocolate covered strawberries. I don’t make them often and certainly don’t buy them already made since they are so expensive. For my last party I decided to make a special set of berries that were stuffed with a cream cheese filling, sort of like strawberry cheesecake. Then I dipped the strawberry cheesecake berries in chocolate.

 

Below you’ll find the run down of what I did. This is more of a logistical how-to than a recipe per se.  You’ll see what I mean…

 

Ingredients

 

  • 24-30 Strawberries
  • 1 block of cream cheese, room temperature
  • ¾ cup white sugar
  • 24 oz. of semi-sweet chocolate chips (2 bags)

 

 

Prepare your filling before cutting your berries. Moisture is your enemy when dipping in chocolate so you want to leave as little time as possible between cutting and dipping. Beat sugar into cream cheese until light and fluffy.  Fill a pastry bag or zip top bag with filling.

 

Wash and dry your berries, leave green tops on. Cut an “X” into the bottom of each berry staying at least a quarter inch away from the top.

 

Pipe roughly a teaspoon of filling into each berry. The “X” shape will expand to hold the filling. You can either dip each berry as you fill it or fill them all and then dip them all. Either way be sure to dry any lingering berry juice from your berry before dipping it in the chocolate.

 

Use a double boiler to heat your chocolate and maintain its temperature throughout the dipping process.  Keep water and berry juice out of the chocolate or the chocolate will seize and you will have to start over with new chocolate!

 

Place the stuffed, dipped berries on a parchment or waxed paper lined baking tray and place in the fridge till party time.

The finished product is a decadent dessert that you can pretend is good for you (fruit!). It’s a win – win.
