Lemon Ice Box Pie Slice

I’m not a big fan of Key lime pie… but I LOVE lemon ice box pie.

 

My friend DJ’s mom makes the BEST lemon ice box pie. I learned a few tricks from her too.

 

Roll your lemons before slicing and juicing. It breaks the membrane walls and lets out more juice with less effort.
Microwave your lemons after rolling for 15 second each (I put them in one at a time). The microwaves rupture cell walls to do what rolling does on a cellular level.

 

These two extra steps with get you nearly two lemons worth of juice from 1 lemon. Pretty sweet…err, sour?

 

Random aside: I buy ready made graham crusts. I don’t think taking the time to make one adds any extra flavor… and they fall apart when the pie is cut.  Pfft. Who has time for that?  I want Pah! (Pie)  Who doesn’t like pie?

 

IngredientsLemon Zest

 

  • 1 ready made graham crust
  • 6 tablespoons unsalted butter, melted
  • Two 14-ounce cans sweetened condensed milk
  • 1 1/4 cups fresh lemon juice, plus 2 tablespoons finely grated lemon zest
  • 8 large egg yolks

 

Use your trusty microplane to get the zest from your lemons before you try to juice them. Remember to strain your juice. I simply place a strainer over my measuring cup and squeeze right into my set up, see photo.

In your first bowl, combine the sweetened condensed milk with the lemon juice.

 

In bowl two, using your hand mixer, beat the zest with & yolks until they lighten in color. Once you have light yolks, mix in the lemon mixture until combined. I do this by hand at first and then switch to the hand mixer so the liquid doesn’t go everywhere.

Pour your mixture into the prepared crust. Bake at 350 degrees for 25 minutes, until the center jiggles a bit only but the edges are “set”.

 

Cool completely and then refrigerate for at least 3 hours before serving.
