Meatballs make me happy. I’m thinking of instituting meatball Monday around my house (I am also a fan of alliteration).

My DH enjoys spicy foods so I researched these for him.  We both enjoy Asian flavors so I figured these would be a hit.  Sure enough, he was thrilled – but they could have been spicier he said. 6 Chilies seems like a lot to me…  Taste test it and let me know what you think!

  • 1 lb ground chicken
  • 2 Tablespoons grated ginger
  • 1/4 cup scallions, chopped
  • 3 cloves grated or minced garlic
  • 1/4 cup bread crumbs
  • 1 egg

  • 1/2 tsp sesame oil
  • 3 Tablespoons Mirin
  • 3 Tablespoons soy sauce
  • 1/4 cup water
  • 2 Tablespoons honey
  • 1 teaspoon corn starch dissolved in 1 tablespoon of cold water
  • 1/4 cup scallions, chopped
  • 6 small dried chilies, seeded and chopped

Combine all the meatball ingredients by hand in a medium bowl. Shape into 1 inch meatballs and place on a foil lined baking sheet. Bake 20 – 25 minutes at 350 degrees. Make sure not to overcook or they will be dry, but at the same time you don’t want to eat raw chicken!

Combine all the sauce ingredients except the cornstarch slurry into a small sauce pan and simmer over medium heat. After the mixture has reduced by ¼ you can your cornstarch and bring back to a simmer after whisking in. Take it off the heat and let thicken.

When the meatballs are done baking, remove from pan and serve coated in sauce. I like to place mine in a bowl and then toss them in the bowl to coat so the sauce gets on all sides.

    Pinned! Looks great! I am often looking for good recipes with ground chicken, and I look forward to trying these meatballs.
